39. Walnut and Prune Salad

Ingredients
· 5 medium beets, scrubbed
· 1/2 cup chopped walnuts
· 1/2 cup mayonnaise
· 25 pitted prunes, chopped
· 3 cloves garlic, pressed
· salt to taste
Directions
In a medium saucepan, bring the beets to a boil, then simmer over medium-low heat for about 20 minutes or until fork-tender. Drain and peel, then run under cold water. Grate the beets and transfer into a serving bowl.
Add the prunes, garlic, walnuts, and mayonnaise into the beets and season to taste.
